-1 bag great value root blend frozen veggies
(if not available just substitute for 1 large sweet potato, chop into chunks)
-3 large carrots, chopped
-3 stalks of celery, chopped
-1 small onion, chopped
-1 can black beans, drained and rinsed
-1 can green beans, drained and rinsed
-32 oz can diced tomatoes
-2 tbsp tomato paste
-16 oz pasta (any kind you like!)
-1 tsp crushed red pepper flakes
-1 tbsp garlic powder
-1 tsp salt
-2 tsp oregano
-1 tsp paprika
-1 tsp basil
*Add onion, carrots and celery to a large pot with a little water, veggie broth or oil to sautee
Cook 3-4 minutes than add seasonings and tomato paste, diced tomatoes and root veggies (or sweet potato)
Add 8 cups of water and beans and cook until are almost tender (about 9 minutes, if you also have sweet potatoes, for about 10 minutes)
Add in pasta and cook for an additional 6 minutes
