-4 potatoes (any type! I like to use russets)
-1 can chickpeas (drained, but I don't rinse mine)
-1 cup frozen spinach
-1/3 cup frank's wing sauce
-4 oz any hummus
-1 celery stalk
*I microwaved my first bake on my potato, you can use the oven or even left over potatoes!
After they are baked, I slice the center and mash about 1/3 of the potato down with a fork
*For the toppings I add all my ingredients except for the celery to a food processor and combine
*Stuff your potatoes with the toppings, bake at 375 for about 20 minutes
Top with chopped celery for a crisp cool crunch
