-2 green peppers, finely chopped
-1 white onion, finely chopped
-1/2 cup rice (see below for instructions based on which type you use)
-16 oz can diced tomatoes
-16 oz can whole crushed tomatoes (can sub for an additional can of diced tomatoes)
-12 oz can tomato sauce
-16 oz can kidney beans
-4 cups veggie broth
*Add onions to large pop, sauté until translucent than add in peppers and cook for an additional 3-4 minutes
I water sauté my veggies but you can use oil or veggie broth!
Once veggies are tender, add in all your other ingredients except for your rice. Bring to a boil than add rice
RICE COOKING INSTRUCTIONS:
if you are using white rice, cooked for 12 minutes
Brown rice: add 2 more cups of veggie broth and cook for 40 minutes
Wild rice: add 2 more cups of veggie broth and cook for 35 minutes
