-1 can corn, drained and rinsed
-2 cans kidney beans, drained and rinsed
-1 small onion, chopped
-1/2 cup red pepper
-1/2 cup green pepper
-32 oz can diced tomatoes
-2 tbsp tomato paste
-2 tbsp chili seasoning (try my homemade! https://www.flourishingmiranda.com/post/homemade-chili-seasoning
Add onion and peppers to a pan with tomato paste and a bit of water, cook for 2--4 minutes than add seasonings and additional ingredients
Cover with 4-5 cups of water and cover with a lid, cook on medium low for about 25 minutes
I made this yesterday, I tweaked it just a bit because I didn’t have a couple ingredients. I used a frozen blend of peppers and onions and fire roasted crushed tomatoes of course that’s what I had and some extra chili seasoning It was delicious and I’m planning on having it again for dinner tonight!
I grew in Ohio and typically had Texas, Cincinatti or Bean chili and I love them all! But I've never thought to add corn (or BABY CORN!) to a recipe. I'm definitely going to add this to my Oct 31 menu. Thank you & keep working on your dream!
