-1 can coconut milk
-1 bag frozen roasted corn (or regular!)
-2 purple sweet potatoes (or whatever you have available!)
-2 mangos
-1 tsp ginger
-1 tsp cinnamon
-1 tbsp garlic powder
-2 tbsp curry powder
*Add chopped sweet potatoes, coconut milk and 4 cups of water to a potato and bring to a boil. Cook 10-12 minutes or until potatoes are tender
-Add seasonings and frozen corn
Cook an additional 2-5 minutes
Serve with chilled mango on top
