Lentil Loaf

Ingredients:

-1 cup lentils

-1/2 cup white rice

-2 jalapeños

-1/2 onion

-1/2 green pepper

-1 cup mushrooms

-3 tbsp tomato paste

-3 tbsp stone ground mustard

-1 tbsp minced garlic

-1/4 cup water


*cook both lentil and rice stove top

*chopped all your veggies and sauté until onions are translucent


*add veggies, rice and lentils together in a large bowl, mix


*pour loaf ingredients on to a pan lined with parchment paper, baking it will shape it so don’t fret with how it looks


*add tomato paste, mustard, garlic and water together and add as a topping


*bake at 350 degrees for 30 minutes


If you want a more sliceable loaf, put rice, lentils and veggies into a food processor, pulse to combine. Than place in a loaf pan lined with parchment paper and firmly press down. Cover with sauce and bake at 350 degrees for 30 minutes
