-1/2 cup lentils
-8 oz pasta (whatever you like!)
-32 oz can diced tomatoes
-2 tbsp tomato paste
-1 onion chopped
-2 tbsp minced garlic
-2 tsp italian seasoning
-salt to taste
*Add your chopped onion to a large pot, sauté in water, oil or veggie broth (whichever you prefer)
*Add seasonings, garlic and lentils, plus 3 cups water. Bring to a boil, then turn to low heat, cover with a lid and cook for 25-28 minutes until lentils are tender
Once lentils are tender, add in diced tomatoes, tomato paste and pasta. Cook for an additional 6-7 minutes (depending on pasta cooking instructions)
