-2 1/2 lb potatoes, peeled and cubed
-1 can of cream corn
-2 cups chopped carrots
-1 cup chopped celery
-7 cups veggie broth
-1/2 cup cream cheese
*Add all veggies and broth to crock pot and cook on low for 6 hours
Remove 1/3 of soup and blend in vitamix with cream cheese, add back
to crock pot and stir to combine with leftover soup
