Creamy Dill Pickle Potato Soup

-2 lbs red potatoes, cubed

-2 cups chopped pickles (any type you like!)

-1 can cream corn

-4 cups veggie broth

-1/2 white onion, chopped

-2 tbsp dill (or use trader joe's in a pickle seasoning)


Add onions to your pot with a splash of veggie broth, sauté until translucent

Add in potatoes, pickles, corn, veggie broth and seasonings and bring to a boil

Boil for 12 minutes, than lower heat to a simmer, cook for an additional 20 minutes


Remove about 6 cups of soup from the pot, add to your vitamix (or use an emersion blender)

to puree until smooth

Return to pot, stir well and bring make to a simmer

This is one of the best soups I've ever had!! It is so flavorful and creamy. I ate this for lunch and dinner, and I know I will eat more later and probably for breakfast tomorrow, too! I did add some mustard and ketchup to my soup bowl and that took it over the top. But by itself, it is just as divine.
