1/2 chopped white onion
2 cups chopped carrots
6 oz coconut milk
2 tbsp corn starch *mix with equal parts water
2 cups chickpeas
1 cup orzo
3 cups veggie broth
1 tsp salt
1 tsp oregano
2 tsp dried basil
Add onion to your pot with a splash of veggie broth to sauté (medium/high heat)
Once almost translucent add in carrots with another splash of veggie broth, cook for 3-5 minutes than add in seasonings, chickpeas, remaining broth, corn starch, coconut milk and orzo
Mix well, add lid to pot and turn heat to low, cook for 10 minutes before opening lid, stirring and serving
