Chocolate Banana Muffins

-3 large ripe bananas

-2 1/2 cups oat flour (I make my own by pulsing oats in my food processor until smooth)

-1 tsp baking soda

-1 tsp baking powder

-1 tbsp unsweetened cocoa powder

-1/4 cup unsweetened nut milk (any type!)

-2 tbsp ground flaxseed

-2 tbsp cold water*


*Add ground flaxseed to cold water, give a little stir and let sit for 2-3 minutes to form a "flax egg"

Add bananas to a large bowl, mash with a fork than add flax egg, nut milk, baking soda, baking powder and cocoa. Mix until combined

Add in oat flour, stir well

Distribute mix to 12 muffin liners

Bake at 350 degrees for 20 minutes or until baked through in the middle (I usually check with a butter knife)
