Almond Butter Date Protein Bars

-10 medjool dates

-2 tbsp agave

-2 tbsp chia seeds

-1/2 cup almond butter

-2 scoops vanilla plant based protein

-1 cup quick oats

-1/4 cup water


*Add dates, agave, chia seeds, almond butter and protein to a food processor and blend until combined

*Then add in oats and water, blend again

(If mix is too dry and not sticky, add a touch more water! It should be sticky enough to roll into a ball)

*Pour mix into an 8x8 baking dish and bake at 350 for 12-15 minutes

Makes 6 protein bars


*You can store these in the refrigerator or room temp, completely up to you!

*You can also adjust ingredients if you have different items on hand or if you have any allergies!

Easy swaps:

-maple syrup (instead of agava)

-1/2 cup pumpkin puree (instead of dates)

-a different flavor of protein or leave out all together and add an additional 1/2 cup oats

-any nut butter you may enjoy better!

These bar are so yummy! Definitely making again. I love grabbing one in the morning or afternoon. I work with young children so always needs lots of energy - these deliver, thanks so much!
